S’more Brownie Bars

This dessert screams summer to me. Yes, it’s the first day of fall, but I’m not ready to let it go just yet.

These brownies have all the great flavors of campfire s’mores – sans campfire. They were a huge hit with our friends!

S’more Brownie Bars
(adapted from Lemons & Love, originally from Kraft)

10 Sheets of graham crackers, broken in half, divided
1 box of brownie mix, prepared according to package directions
3 cups mini marshmallows
1 cup semi-sweet chocolate chips

Preheat over to 350 degrees.

Live a 9×13″ baking pan with foil and grease the foil. Line the bottom of the pan with graham crackers. Break remaining grahams into pieces and set aside.

Prepare brownie mix according to package directions and pour into pan over graham crackers. Bake for 30 minutes or until toothpick inserted in center comes out with fudgey crumbs. (Be careful not to over-bake.)

Sprinkle with mini marshmallows and chocolate chunks. Bake for an additional 3 to 5 minutes or until marshmallows begin to puff. Broil for 30 seconds – 1 minute to toast up marshmallows. Press reserved graham crackers into marshmallows.

Cool completely. For easiest cutting, freeze for 20 minutes before cutting into squares.
