Fluffy Banana Muffins

I love bananas but I vastly prefer them when they’re still a little green. As a result, we always end up with a few over-ripe bananas out of a bunch.

This is a great muffin recipe for using them up. The yogurt makes them nice and fluffy – almost cupcake-like.

Fluffy Banana Muffins

3/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup vegetable oil
1/2 cup yogurt – plain or vanilla
1 teaspoon vanilla extract
4 black bananas, mashed well

In a large bowl, combine the dry ingredients. In a separate bowl, combine the egg, oil, yogurt and vanilla. Add the wet ingredients to the dry and mix until just moistened. Add in any extras you may want (nuts, chocolate chips).

Add batter to lined muffin tins until 2/3 full. Bake at 350° for 22 minutes or until an inserted toothpick comes out clean.
