These aren’t from my Grammy – they’re from Martha Stewart – but they’re Santa-approved. And husband-approved.
These cookies are soft and perfectly chocolatey. Paired with a glass of milk they’re heavenly.
I’ll be leaving these out for Santa Friday night!
Grammy’s Chocolate Cookies
(from Martha Stewart)
2 c. flour
3/4 c. Dutch cocoa powder
1 t. baking soda
1/2 t. salt
1 1/4 c. unsalted butter, room temperature
2 c. granulated sugar (I used castor sugar)
2 t. pure vanilla extract
sanding sugar for rolling
Sift together flour, cocoa powder, baking soda, and salt. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy, about 2 minutes. Add vanilla, and mix to combine. Gradually add dry ingredients, and combine with mixer on low speed.
Cover bowl with plastic wrap, and chill until dough is firm, about 1 hour.
Preheat the oven to 350F degrees. Line baking sheets with baking paper. Roll dough into 1¼ inch balls. Roll each ball in sanding sugar. Place on prepared baking sheets about 1 1/2 inches apart.
Bake until set, about 10-12 minutes, rotating halfway through. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
