For our girls’ brunch a few weeks ago, my cousin brought a really great quiche. When I asked her about the recipe, she said it was actually my mother-in-law’s! Funny how small of a world it is.
This is a great, easy, veggie-packed dish. I’ve been heating it up every morning for breakfast and can’t get enough!
1 lb. shredded zucchini
1/2 c. parmesan cheese
1 c. bisquick
1/4 c. chopped green onion
Dash of salt
Dash of pepper
Mix together and bake at 350F degrees for 30 – 35 minutes.
