Pistachio Ambrosia

In my family, we call this “Martha’s Green Stuff”. My Mom’s coworker, Martha, made this for a BBQ at one point and we all loved it so the recipe became a family regular. I could not, for the life of me, get it to look pretty for a picture – but it’s fantastic.

There’s nothing fancy here – just a quick dish that makes a great summer dessert. I love this so much that I only make it when we have company – otherwise it’s likely I’d just eat the whole thing in one sitting!

Pistachio Ambrosia

1 (8 oz.) container Cool Whip, thawed
1 (8 oz.) container sour cream
1 box pistachio pudding mix
1 (16 oz.) can crushed pineapple, drained
1/2 bag mini marshmallows

Mix all ingredients together and refrigerate until ready to serve.
