I’ve been making – and loving – this salad for most of the summer. The most recent recipe swap I participated in was for apple recipes and I got a very similar recipe to try out (Melissa’s chicken salad with apples and walnuts) so it seemed like a great opportunity to finally share this recipe.
This is a great recipe. Instead of mayonnaise, it uses plain greek yogurt – this makes it higher in protein and lower in fat. You can also bulk it up with additional apple and celery if you want more of a fruit/veggie kick. I like to serve it on nice, dark bread or on a croissant. It’s really good solo, too.
It’s not the prettiest dish ever, but its delicious!
Apple Walnut Chicken Salad
(from Self magazine)
Serves 3-4
6 oz. shredded or cubed cooked chicken
1/3 c. chopped celery
1 apple, chopped
1/4 to 1/3 c. raisins
1/4 c. chopped walnuts
6 oz. greek yogurt
1 T. Dijon mustard
1 T. red wine vinegar
Mix all ingredients together in a medium bowl. Refrigerate until ready to serve.
Yum! I love a good chicken salad recipe.
