Herb Roasted Turkey Breast

Thanksgiving is always a family-filled day for us. A big turkey is one of the staples. When we’re making turkey for just the two of us, though, we forgo the turkey in favor of a turkey breast.

I like to keep the seasonings simple. I want something that will be flavorful, but will also not overpower other dishes inevitably made from the leftovers. This simple seasoning fits the bill and it one of my favorites.

Herb Roasted Turkey Breast
Serves 6

3 lb. turkey breast
2 T. melted butter
1 T. herbs de Provence
1 t. parsley

Preheat oven to 325F degrees.

Place turkey breast in a roasting pan. Brush with melted butter and sprinkle with herbs.

Roast for 2 hours, or until a meat thermometer reads 170F degrees. Let rest for 10 minutes before slicing.

If the turkey starts to get too dark while roasting, cover with foil.
