Glazed Drumsticks

Football season may be over, but March Madness is just around the corner. College basketball is, arguably, my husband’s favorite sport to watch so we end up doing dinner in front of the TV a lot more when the games are on constantly and a bracket is at stake.

These wings are sweet, tangy and oh-so-good – perfect food for during a game. The recipe calls for them to be baked – I also think they would be awesome grilled.

Glazed Drumsticks

Makes 1 dozen

12 chicken drumsticks
1 large onion, roughly chopped
6 T. lemon juice
6 T. soy sauce
1/2 t. salt
Ground pepper
10 drops of Tabasco sauce
2 t. ground coriander
4 T. brown sugar
4 T. plum jam
4 T. vegetable oil

Place all ingredients except drumsticks in a food processor and blend until fairly smooth and well combined.

Make 2-3 slashes in each drumstick. Place drumsticks in a shallow oven-proof dish. Coat each drumstick heavily with the marinade (Use about half of the mix). Cover and marinate overnight in the fridge.

Remove chicken from the fridge and pre-heat the oven to 375˚F. Coat the drumsticks with an addition 1 tablespoon of the sauce each. Bake for 40-45 minutes, watching for burning.
