One of my favorite places to find weeknight meal ideas is Closet Cooking. Kevin’s style is straight-forward and accessible and every recipe of his I’ve tried has been absolutely delicious. This one was no different.
Start to finish, this can be on the table in fifteen minutes. If you wanted to speed things up even more, you could cook the chicken the day before.
Buffalo Chicken Clubs

Serves 2
2 small chicken breasts
1/2 t. paprika
Salt and pepper to taste
1/4 c. hot sauce
1 T. butter, melted
2 buns
4 strips bacon, cooked
1/4 c. blue cheese, crumbled
1 large tomato, sliced
2 leaves lettuce
Season the chicken with paprika, salt and pepper. Heat the grill over medium heat and spray with non-stick cooking spray. Grill the chicken until cooked and slightly charred, about 3-5 minutes per side.
Mix the hot sauce and butter and coat the chicken in the mixture. Assemble sandwiches.
