When I was assigned homemade manicotti from Simple Gourmet Cooking for the last recipe swap, I ended up browsing the rest of her blog and bookmarking a whole bunch of recipes to try. The latest swap theme is Blogger’s Choice and I’m once again signed Dawn’s blog. I thought it would be easy to pick something because I’d already looked through her blog, but everything looked so good I had a lot of trouble deciding.
Ultimately, I let my husband pick. I shouldn’t have been surprised when he picked these because they combine two of his favorite meals.
We both really enjoyed these burgers. They’re a great summertime take on the Italian classic.
Chicken Parmesan Burgers
(as seen on Simple Gourmet Cooking, originally from Elly Says Opa!)
Serves 2
1/2 lb. ground chicken
2 T. grated Parmesan cheese
2 T. Italian seasoned bread crumbs
1/2 t. Italian seasoning
2 T. chopped flat leaf parsley
1 clove garlic, minced
1 T. yellow onion, finely diced
Salt and pepper
Tomato sauce
2 slices Mozzarella cheese
2 buns brushed with garlic butter
In a bowl, mix together chicken, parmesan cheese, bread crumbs, seasonings, onion and garlic. Form into four patties and refrigerate for at least 3o minutes.
Grill over medium heat, 6 minutes per side. Top with sauce and cheese and continue to grill until melted.
Meanwhile, spread the buns with garlic butter and toast lightly.
Serve burgers on toasted buns.
