Cheeseburger Burritos

I swear that every time I plan to grill out, it rains. Or at least it feels that way lately. I can’t remember the last time we’ve had so much rain!

It’s meant a few hiccups our meal plans. I was dreaming of burgers on the grill one night, but grilling in the pouring rain had zero appeal – so they became burger burritos instead. It wasn’t the juicy, grilled burger I was daydreaming about, but it was a good approximation for a rainy night – and my son loved them.

Ingredients

  • 1 lb. ground beef
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced onion
  • 1/2 cup mustard
  • 1/2 cup ketchup
  • 1/2 cup chopped dill pickle
  • 1 cup shredded cheddar cheese + additional for serving
  • 4 large flour tortillas
  • Shredded lettuce
  • Chopped tomatoes
  • Chopped pickles

What do you love on your burger? Bacon? Crunchy onions? Avocado? Whatever it is, add it in! These are so easily customizable that it’s just begging you to dress it up your way!

Directions

  • In a large skillet over medium heat, add the ground beef, onion powder, garlic powder, salt, and pepper. Cook, breaking up into small pieces, until browned. Drain the grease.
  • Stir in the onion, mustard, and ketchup. Bring to a boil, then reduce heat and simmer for 5 minutes.
  • Stir in pickles and cheese and remove from heat.
  • Divide the mixture between tortillas. Top with additional shredded cheese, tomatoes, lettuce, and pickles and roll up. Serve immediately.

This filling reheats really well, so it’s perfect to make ahead. Whether you’re cooking it up early to make dinner, or prepping it to use for quick lunches, this is a great choice! I love to chop my toppings into a separate container so they’re ready to go too.
