One of my local grocery stores does a special meal-of-the-week. For a fairly heavy discount, you get a meal for four that’s easy to prepare. And often, they come with dinner.
Which is why, nearly every night when we sit down to eat, my kids now ask, “does this come with dessert?”
I’ll be honest, this annoys the heck out of me. We are not a family that does dessert nightly but boy, when it’s in the cards do the kids eat well. Suddenly, the power struggles evaporate and they’ll down whatever is on the plate.
The compromise has been making some desserts that I don’t mind them eating. Not only was this one a favorite, but it’s easy enough that they can mostly make it by themselves.
We used cow’s milk in these, because that’s what we have on hand, but almond milk would be great too! The honey in this is definitely “to taste”. I found that 1/3 cup was good for us, but you’ll probably want to start with 3-4 Tbsp. and then taste. My ultimate plan is to make these a little less sweet each time we make them so the kids don’t notice!
- Scoop the avocado flesh out
- Peel the banana
- Add everything to the blender
- Pour or spoon the mixture into the popsicle molds
Adults will need to:
- Slice the avocados in half
- Help measure
- Put the popsicles in the freezer
Chocolate Avocado Pudding Popsicles
Makes approximately 6, depending on popsicle mold size
1 ripe banana
1 1/2 cups milk of choice
1/3 cup cocoa powder
1/3 cup honey – to taste
1 Tbsp. vanilla extract
Pinch of salt
Combine all ingredients in a blender and blend until well combined. Pour into popsicle molds and freeze.
