Berry Baked Oatmeal
Serves 6
2 cups milk
Preheat the oven to 375 degrees. Spray an 8×8 baking pan with nonstick spray.
In a bowl, whisk together the oats, baking powder, cinnamon, salt, and brown sugar.
Spread 1 cup of berries in the bottom of the baking dish. Cover with the oat mixture.
In the now-empty bowl, whisk together the milk, eggs, vanilla, honey, and melted butter. Pour over the oat mixture in the pan. Top with remaining berries and pecans.
Bake until all the liquid is absorbed, approximately 40-45 minutes.
