Chicken Fajita Burgers
Serves 4
1 Tbsp. chili powder
1/2 Tbsp. paprika
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. cumin
1/8 tsp. cayenne pepper
1 tsp. sugar
1/2 tsp. salt
1/2 Tbsp. corn starch
1 lb. ground chicken
1 egg
1/3 cup panko breadcrumbs
1 onion, sliced
1 green pepper, sliced
1 red peppers, sliced
2 tsp. olive oil
1 lime
Cabot 4 Cheese Mexican Shredded Cheese
1 avocado
Salt and pepper, to taste
Burger buns
In a small bowl, whisk together the chili powder, paprika, onion, garlic, cumin, cayenne, sugar, salt, and corn starch.
In a large bowl, combine the ground chicken, egg, panko, and 2 Tbsp. of the seasoning. Form into 4 burger patties and refrigerate.
In another bowl, combine the onion, peppers, olive oil, and remaining seasoning. Add to a skillet and cook until soft, about 7-10 minutes. Squeeze the juice of half a lime over. Transfer to a dish and cover to keep warm.
Cook the patties in the skillet, or on a grill, for about 10 minutes, turning halfway, until cooked through. During the last minute of cooking, add cheese to the top and cover the skillet so the cheese will melt.
Mash the avocado and combine with the juice of the other half of the lime and salt and pepper to taste.
Spread the mashed avocado mixture on the bottom bun, top with a burger pattie and cooked onions and peppers.

Why did I not think of this? I’m a total chicken fajita hoor!! They’re my fave at every Tex-Mex restaurant. You can bet these are going ON THE MENU!! Yum!
