Chicken Alfredo Ravioli

Does anyone else feel like February went by at warp speed? I don’t know what happened, but I feel like I blinked and it was over. I feel like so many nights I was scrambling at dinner time – where did my day go?! – so quick and easy was definitely the name of the game.

This easy casserole is just perfect for busy nights – and a really kid-pleaser.

Or maybe I should just say crowd-pleaser? After all, who isn’t a fan of ravioli in Alfredo sauce?

Ingredients

  • 24 oz. frozen cheese ravioli
  • 1 chicken breast, cooked and chopped
    • or use 2 cups shredded rotisserie chicken
  • 36 oz. Alfredo sauce
  • 1/2 cup water
  • 1/2 cup frozen peas
  • 1 cup shredded mozzarella cheese
  • 1/3 cup shredded Parmesan

I love casseroles that are based on pantry staples – like this one. Ravioli and peas are almost always in my freezer, and the cheeses are always in my refrigerator. A quick stop at the store for Alfredo sauce and a rotisserie chicken and I’m all set!

Directions

  • Preheat the oven to 350 degrees. Spray a 9×11″ baking dish with non-stick spray.
  • In a large bowl, whisk together the Alfredo sauce and water. Stir in the frozen ravioli and peas. Pour into the prepared baking dish.
  • Sprinkle evenly with mozzarella and Parmesan.
  • Bake for 30 minutes, until heated through and bubbly.

This casserole is so, so easy to make! It’s essentially a dump-and-bake. Just a few minutes of assembly and this dish is ready to go in the oven!

What to serve on the side

Since this dish has classic Italian flavors, I go for classic Italian sides here – my favorite being a simple Caesar salad and garlic bread. If I have a little more time to prep, Italian Chopped Salad and Slow Cooker Cheesy Herb Dinner Rolls pair perfectly!

You can prep this ahead of time

One of my favorite features of this dinner is that it’s easily prepped ahead.

You can prep this the night before or in the morning – just assemble, cover, and then let sit at room temperature as you preheat the oven when ready to bake.

It can also be a freezer meal – assemble as directed, cover, and freeze. The night before baking, thaw in the refrigerator then bake as directed.
