Cheddar Ranch Chicken Thighs

These days, I perpetually feel like I’m out of time when dinner comes. It was bad before social distancing and now I feel like the kids are attached to me 24/7. What’s a cook to do?

Prep the quickest dinner possible, of course. These cheddar ranch chicken thighs are ready for the oven in under ten minutes – which is just about the amount of time I can distract the kids for.

Ingredients

  • 8-12 boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1 package dry ranch dressing mix
  • 3 cloves garlic, minced
  • 1/3 cup panko bread crumbs

I love how just a few ingredients come together to make such an awesome dish. These are all things I regularly have in the house so this is one of my easy meals to throw together!

Don’t have chicken thighs? Chicken breasts or tenders would work just fine too!

Directions

  • Preheat the oven to 400F degrees. Spray a 9×11 pan with non-stick spray. Arrange chicken thighs in the pan. Season with salt and pepper.
  • In a small bowl, mix together the mayonnaise, cheddar cheese, ranch mix and garlic. Spread evenly over the chicken.
  • Sprinkle the panko evenly over the top of everything.
  • Bake for 25-35 minutes, until cooked through and golden brown on top.

This is just so easy to put together! Chicken gets put in a baking dish and seasoned, then you top it with a mixture of mayonnaise, cheese, ranch mix, and garlic. A few panko breadcrumbs top it off for a little crunch. So easy – the kids can even help with this one!

Can I make this ahead?

Absolutely! When I prep ahead, I leave off the panko and add it when ready to bake. These also reheat really well so if you want to bake and reheat, I suggest leaving the panko off. When you reheat, I suggest adding the panko and spraying the top with nonstick spray. Bake until heated through!
