I’m so excited #SpringSweetsWeek kicks off today because I feel like we all need a little happy right now. And what’s more happy than a week choc full of bright, springy desserts?

I’m starting off with some couldn’t-be-easier cookies that taste nothing short of amazing! These lemonade crinkle cookies have a nice, tart bite but are also soft and creamy, thanks to the addition of cream cheese.

Ingredients
- 1/2 cup butter, softened
- 8 oz. cream cheese, softened
- 1 egg
- 1 tsp. lemon extract
- 1 box lemon cake mix
- 3/4 cup powdered sugar, divided
The base of these cookies are a cake mix, which speeds up the prep significantly! Also, because these are really easy measurements – 1 stick butter, 1 bar of cream cheese, 1 box cake mix – it’s a really great recipe to let the little ones help with!

Directions
- In a medium bowl, beat together the butter, cream cheese, egg, and lemon extract until fluffy.
- Add the cake mix and beat until smooth.
- Refrigerate for at least 30 minutes.
- Preheat the oven to 350 degrees.
- Put 1/2 cup powdered sugar in a small bowl.
- Roll dough into 1 inch balls. Roll them in powdered sugar and place them on a baking sheet.
- Bake for 12 minutes, or until the edges are just starting to turn golden.
- Let cool on the pan for 10 minutes then transfer to a cooling rack to cool completely.
- Sift remaining 1/2 cup powdered sugar over cooled cookies.
These cookies mix up quickly- but chilling the dough before baking is essential to keep them from over-spreading. While they need a minimum of 30 minutes to chill, you could always leave them in the fridge a little longer – I often refrigerate for up to a day before baking!
After baking, these can be stored on the counter in an airtight container for up to a week, or frozen for several months.
