To me, cookies and milk are classic comfort food. I’m not sure there’s anything I look forward to more!

These chocolate cookies are some of my favorites – they’re rich, soft, and chewy. They’re a perfect bite – and perfect with a cold glass of milk.

Ingredients
- 2 cups flour
- 3/4 cup cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/4 cup unsalted butter, at room temperature
- 2 cup granulated sugar
- 2 eggs
- 2 tsp. vanilla extract
- Sanding sugar, for rolling
These unfussy ingredients make an impressive cookie! The sanding sugar gives these a little texture, but they’re also awesome without it (I leave it off when I’m making them into ice cream sandwiches!)
You can also switch up the flavor by substituting 1 tsp. of the vanilla extract for another extract. I’ve used coffee extract, orange extract, and almond extract with great results!

Directions
- In a medium bowl, sift together the flour, cocoa powder, and baking soda.
- In a stand mixer, cream together the butter, granulated sugar, and eggs until light and fluffy. Mix in vanilla.
- With the mixer on low speed, slowly add in the dry ingredients and mix until thoroughly combined.
- Cover the dough with plastic wrap and refrigerate until firm, at least an hour.
- Preheat the oven to 350 degrees and line cookie sheets with baking parchment.
- Roll the dough into 1″ balls, then roll in the sanding sugar. Place on the baking sheet, leaving a few inches between to spread.
- Bake for 10-12 minutes, until set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
These come out of the oven soft. You want them to be set, but not totally firm when you take them out. If you try to transfer them off the baking sheet immediately, they’ll fall apart, but after a few minutes of sitting they’ll be firm enough to move to a cooling rack!

Other Awesome Cookies
These cookies are a favorite! I’ve turned them into Ice Cream Sandwiches and Coffee Ice Cream Sandwiches – I just leave off the sanding sugar if I’m using them for ice cream sandwiches.
