Garlic Scape Dip

Have you ever tried garlic scapes? These curly, green shoots are the top of the garlic plant – and they taste just like garlic! The first time they showed up in our CSA share I had no idea what to do with them – now they’re something I look forward to every year.

One of my favorite uses for garlic scapes is this easy dip. It’s delicious, and only takes a few minutes to put together.

Ingredients

  • 5-6 garlic scapes
  • 1/4 cup fresh basil
  • 1 1/2 cups plain Greek yogurt
  • 1 lemon, zested and juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Just a few simple ingredients make up this dip! Garlic scapes have a limited season so this becomes our go-to when they’re available.

The flavor on this has a kick – like raw garlic has a kick. If you think it may be too strong for you, start with 3 garlic scapes and add more as you go.

Directions

  • Wash garlic scapes and remove the bulb end.
  • Add garlic scapes, basil, yogurt, lemon juice, lemon zest, salt, onion powder, and black pepper to a food processor. Process until the garlic scapes and basil are finely chopped and everything is thoroughly combined.
  • Refrigerate until ready to serve.

This dip is so quick and easy to make! It takes just a minute or two to prep the garlic scapes, and then another minute or two to pulse everything together in the food processor.

We serve this mostly with fresh, dip-able veggies, like baby carrots, mini peppers, and celery sticks. It’s also awesome with pita chips!

Other great veggie dips

We eat a lot of fresh vegetables – especially during CSA season – and my favorite way to switch them up is serving them with different dips!

We love hummus – this classic version is the best. I also love this Buffalo Hummus (but it’s a little too spicy for the kids!) Another crowd-pleaser is this Ranch Veggie Dip. After trying this one, you’ll never go back to store-bought!
