These beef skewers are one of my favorite prep-ahead meals during the summer. I’ll prep them the night before along with some cold salads and then have dinner on the (picnic) table in only fifteen minutes.

They’re sweet and tender and the long marinade time makes them burst with flavor. Whether you’re hosting company or just trying to feed your own family fast, these will be a hit.

Ingredients
- 3/4 cup lemon-lime soda
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 3 Tablespoons lemon juice
- 1/2 cup brown sugar
- 6 cloves garlic, crushed
- 1 teaspoon black pepper
- 1 1/2 lbs. beef cubes
This sweet marinade is my favorite! I usually have all the ingredients on hand to whip it up which makes it a great go-to.

Directions
- In a bowl, whisk together the soda, soy sauce, vinegar, brown sugar, garlic, and pepper.
- Add the beef cubes and stir to coat.
- Refrigerate for at least 12 hours.
- When ready to cook, preheat your grill to medium-high.
- Thread the beef cubes onto skewers and grill for 10-12 minutes, turning halfway.
The secret to these – if you can even call it that – is the long marinade time. The soda helps tenderize the meat and it really soaks up the sweetness. The result looks unassuming, but it’s something you’ll make again and again.
The leftovers – if you have any – are great over a salad or made into a sandwich!
