Strawberry Chicken Chopped Salad

Lettuce has been in our CSA share every week. And it’s not a little bit – it’s always a big ‘ole head. We’ve also got some in our own garden. As such, salads are a staple. We have side salads nearly every night with dinner – and big, bountiful salads for lunch.

This salad was one I whipped up for dinner one night. Full of produce from our farm share and topped with a homemade dressing, it’s summer in a bowl.

Ingredients

  • 1 head romaine lettuce, chopped into bite-sized pieces
  • 1/4 red onion, diced
  • 1 cup strawberries, sliced
  • 6 slices of bacon, cooked and crumbed
  • 1/3 cup crumbled feta
  • 3/4 lb. grilled chicken breast, sliced
  • Poppy seed dressing

Prepping the elements ahead make this a breeze at meal time. I grilled the chicken while grilling up dinner the previous night, and cooked up bacon for breakfast. The dressing can be easily made ahead, too.

Directions

  • Toss together the lettuce, onion, strawberries, bacon, and feta.
  • Top with grilled chicken.
  • Add dressing to taste.

If serving to a big group, make it in a big bowl!

To make these for lunches through the week, layer in jars as follows: dressing on the bottom followed by chicken, bacon, feta, red onion, strawberries, and fill the rest of the jar with lettuce. These will last in the refrigerator for 3-4 days.

Ingredients

  • 1/3 cup sugar
  • 3 Tablespoon cider vinegar
  • 2 heaping teaspoons grated onion
  • 1 1/2 teaspoon ground mustard
  • 1/2 teaspoon poppy seeds
  • 1/4 teaspoon salt
  • 1/2 cup olive oil

Instructions

  1. Whisk together the sugar, cider vinegar, grated onion, ground mustard, poppy seeds, and salt.
  2. Whisk in the olive oil.
  3. Refrigerate until ready to serve.
