Popcorn Snack Bars

Popcorn is a favorite snack around here – and these bars are such a fun way to dress it up. This is a no-bake treat, so it’s a great one to get the kids helping with!

Popcorn is tossed together with oats, dried fruit, and nuts, and covered in a honey syrup – each bite is a mix of sweet and salty. It’s also hearty enough to hold my very hungry kid-apillars over until dinner so they’re a favorite after school snack here!

Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 3/4 cup almonds, chopped
  • 8 cups plain popcorn
  • 2 cups rolled oats
  • 1/2 cup raisins
  • 1/2 cup thinly sliced dried apricots
  • 3/4 cup honey
  • 3/4 cup packed brown sugar
  • 1/4 teaspoon salt

I like to think of these as trail mix – what do I have in the cabinet to use up that I can throw in? Any combo of nuts and dried fruit work well with this base! Dried cranberries, peanuts and dark chocolate chips are another favorite combo.

Directions

  • Preheat the oven to 350 degrees. Spread the coconut on a baking sheet and toast in the oven for 5 minutes, stirring once or twice.
  • Add the coconut to a large bowl, wipe the baking sheet, and add the chopped almonds. Toast in the oven for 5 minutes, stirring once or twice. Add to the large bowl with the coconut.
  • Add the popcorn, oats, raisins, and apricots to the bowl and toss to combine.
  • In a small saucepan, melt together the brown sugar, honey, and salt. Stir constantly until sugar is completely melted, then pour over the popcorn mixture. Stir until evenly combined.
  • Spray a 9×12″ baking pan with non-stick spray and press the popcorn mixture into the pan.
  • Refrigerate for 2 hours, then cut into squares.

At room temp, these remain pretty soft so I keep them in the fridge in an airtight container. If you’re taking them with you, i suggest rolling them into popcorn balls instead of keeping the bar shape – they’ll transport better!
