What’s the last thing you did solely for yourself?
It’s a hard season for self care – especially since fall also means back-to-school for so many. It’s easy to get caught up in all the “to-dos” – I know I do.

Often, I’ll extend that in to blog projects. This galette? I made just for me. Just because I wanted to. And yes, I ate the whole thing myself.
I love tarts that have a cream cheese base – and I love almond. No one else in the family enjoys either much. This dish was a love letter to both flavors – and to myself.

Ingredients
- 1 refrigerated pie crust
- 6 oz. cream cheese, softened
- 2 Tablespoons honey
- 1 Tablespoons flour
- 1 teaspoon Taylor & Colledge Almond Extract Paste
- 1/8 teaspoon salt
- 2 eggs
- 1 1/4 cups thin-sliced Apples from Melissa’s Produce
- 2 Tablespoons sliced almonds
This tart is made easier by using a refrigerated pie crust for the base.
The cream cheese layer has the perfect touch of almond and pairs so nicely with the apples!
This galette isn’t overly sweet, which for me means it’s a perfectly acceptable breakfast treat too. If you’re looking for something a little sweeter, toss the apple with a little cinnamon sugar or sprinkle coarse sugar over the whole galette before baking.

Directions
- Preheat the oven to 375 degrees.
- On baking parchment, roll out the pie crust to a 16″ circle.
- With a mixer, beat together the cream cheese, honey, flour, almond extract, salt, and one egg until well combined.
- Spread the cream cheese mixture over the pie crust, leaving a 2″ edge. Top with apples then sprinkle with sliced almonds.
- Fold up the edges of the pie crust to cover the edge of the cream cheese and apples.
- Beat the remaining egg in a small bowl. Brush over the galette.
- Bake for 30-35 minutes, until golden.
- Let cool before serving.
This is best served at room temperature – or even chilled – so it’s a great one to make ahead!
To store, cover with plastic wrap and refrigerate. Let sit at room temperature for about 20 minutes before serving.

Almond Apple Galette
Ingredients
