Who else is pumped for Halloween? I know this year is going to look different, but I still can’t help but be excited – Halloween is one of my favorite days. I’m planning lots of fun eats and crafts at home. We’ve got our costumes and we’re ready!

I have a lot of cookies on this blog, but Monster cookies are one of my favorites – and when you add candy eyeballs, they become deliciously perfect for Halloween.

Ingredients
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/2 cup creamy peanut butter
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups old-fashioned oats
- 1/3 cup peanut butter chips
- 1/3 cup semi-sweet chocolate chips
- 1/3 cup mini M&Ms + additional for topping
- Candy eyeballs, optional
Monster cookies are what I call clean-out-the pantry cookies. Whatever chips, nuts, and candy I have to use up are what get dumped in!
Directions
- Preheat the oven to 350 degrees. Line a baking sheet with baking parchment.
- Using a mixer, cream together the butter and sugars until thoroughly combined. Beat in the peanut butter, egg, and vanilla.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add to the wet ingredients and beat until thoroughly combined, scraping down the sides as needed.
- Beat in the oats.
- Fold in the peanut butter chips, chocolate chips, and mini M&Ms.
- Roll into 1-inch balls and place 3 inches apart on the baking sheet. Push several candy eyeballs into each cookie, and some additional mini M&Ms.
- Bake for 10-11 minutes. Let cool on the baking sheet for 5 minutes before transferring to a wire wrack to cool completely.
If you want cookies that look smooth and round, roll the dough into balls. If you want a more lumpy, abstract look, drop the dough by tablespoons full onto the prepared cookie sheet.
