Slow Cooker Italian Sandwiches

How’s life lately? I mean really – are you hanging on?

I’m hearing from so many friends that they’re overwhelmed. There are so many balls in the air that things like dinner just get pushed to the back burner. They want to make dinner but they can’t handle more work.

This is a great meal for those nights.

Hot sandwiches make a great, easy dinner. These are individually wrapped – making them easily customizable for each family member – and warmed in the slow cooker – which makes the cook time flexible.

You can prep in these the afternoon and run around to a sports/errands/activities and walk in to a hot meal with no extra prep. Or, family members on different schedules can come through and grab a sandwich when they’re ready.

It’s a perfect meal to leave for the babysitter – and easy enough that the kids could do it themselves. Didn’t get them in the slow cooker in time? Just pop them in the oven instead. It’s a perfectly versatile recipe to have in your dinner arsenal.

Ingredients

  • 1/3 cup water
  • 4 sandwich rolls
  • 8 slices ham
  • 8 slices hard salami
  • 12 slices pepperoni
  • 1/2 cup roasted red peppers
  • 8 slices provolone
  • 2 Tablespoons butter
  • Italian seasoning, to taste
  • Foil

The beauty of these sandwiches is they can be customized for everyone in the family! Does someone really like onions? Add some! Pepperoni too much spice? Skip it. My kids always request theirs without roasted red peppers. You can make it to everyone’s tastes with no extra effort.

Directions

  • Roll up foil into a coil shape and place in the bottom of the slow cooker. You want it to be about 1″ tall. Pour the water into the slow cooker. If the water fully covers the foil, add a second coil layer.
  • Assemble four sandwiches: on each place 2 slices of ham, 2 slices of hard salami, 3 slices with pepperoni, 2 Tablespoons roasted red peppers, and 2 slices of provolone.
  • Spread butter on the cut side of the top of each roll and sprinkle with Italian seasoning, to taste. Add the tops to the sandwiches and wrap in foil.
  • Place the sandwiches into the slow cooker, making sure they don’t touch the water (they’ll get mushy) or the sides of the slow cooker (they’ll get crisp).
  • Cook on low for 3-4 hours.

These can also be cooked in the oven! Wrap them up and stick them on a baking sheet in a 350 degree oven for 10-15 minutes. It’s a perfect option for nights when you need a quick meal but didn’t get the slow cooker going in time.
