No-Churn Lemon Ice Cream #SpringSweetsWeek

Oh, hello there spring!

I always love the change of seasons – and especially the arrival of spring. The longer days, warmer weather, and watching everything green up just fills my soul after the winter months. And this year, it feels especially poignant. After a year of social distancing, watching the people around me getting vaccinated gives me so much hope that we’re really going to break out of this long winter.

I’m so excited to kick off spring with #SpringSweetsWeek again this year! This week, I’ll be sharing four new dessert recipes – starting off with this couldn’t-be-easier lemon ice cream.

This ice cream is really the perfect way to start this week – is easy, delightfully creamy, and packed with flavor. I love the melt-in-your-mouth texture of this no-churn dessert and lemon is the perfect flavor to roll us into spring. (Though, really, it’ll be perfect for all the warm weather months coming!

This ice cream is beautiful served on it’s own, but it’s also a great accompaniment to pound cake – or sandwich it between graham crackers for an easy ice cream sandwich!

Ingredients

  • 2 cups heavy cream
  • 10 oz. sweetened condensed milk
  • 1 Tablespoon lemon extract paste
  • 1/2 cup lemon juice

This recipe is super simple – it only involves four ingredients. Because it’s so simple, it’s important to use quality ingredients. This was the perfect recipe to showcase Taylor and Colledge‘s Lemon Extract Paste in – it gives a vibrant lemon flavor and does not taste the least bit fake (which can be a problem with some extracts!) The paste packs an extra punch of flavor compared to a regular extract, too!

Directions

  • Using a hand mixer or stand mixer, beat the heavy cream until it forms stiff peaks.
  • Beat it in the sweetened condensed milk, lemon juice, and extract paste until combined.
  • Spoon the mixture into a loaf pan and freeze for at last 6 hours.

I think a lot of people over-complicate the ice cream process when the truth is no-churn options are super doable at home. The hardest part is making sure you whip your heavy cream to stiff peaks – when you start to pull the beater out, you want it to make a “mountain peak” and stay there, not collapse back down into the cream.

Once you have everything mixed up, it’s just a matter of being patient enough while waiting for it to properly freeze!

No-Churn Lemon Ice Cream
