Key Lime Pie Martini

I made a key lime pie for Pi day this year and while digging out my recipe I stumbled upon a recipe for a key lime pie martini. Obviously, I was immediately obsessed – until I actually tried it.

The recipe was so not my speed. It was very much a martini and I’m very much someone who prefers my alcohol to taste like dessert, not alcohol, if you know what I mean.

So, I set out to make one that met my own expectations – and this one is it. It’s a great balance of sweet and tangy and plenty creamy. It’s basically like drinking a slice of key lime pie and I love it.

What’s in a Key Lime Pie Martini?

This martini includes just four ingredients:

  • RumChata
  • Vanilla vodka
  • Key lime juice
  • Sweetened condensed milk

This recipe is sized for just one martini so you can grab the airplane-sized bottle of RumChata and vanilla vodka if you’re making just one! If you’re making these for a few people, bigger bottles will be the way to go.

You can buy bottled key lime juice, but if you can find fresh key limes, juicing them is worth the effort.

Any leftover sweetened condensed milk can be used for magic cookie bars – even missing a few tablespoons, they’ll bake up fine.

Key Lime Pie Martini

Key Lime Pie Martini

Ingredients

  • 1 ounce RumChata
  • 1 ounce vanilla vodka
  • 2 1/2 Tablespoons key lime juice
  • 3 Tablespoons sweetened condensed milk
  • Crushed graham crackers, for the rim

Instructions

  1. Wet the rim of a martini glass with water or key lime juice then dip in the crushed graham crackers to rim.
  2. Add all ingredients to a cocktail shaker with ice. Shake and pour into the rimmed martini glass.
  3. Garnish with a lime slice if desired.
