What is your go-to summer appetizer? I feel like so many summer favorites are dips – and this is a beautiful change of pace! These bites are full of fresh flavors and a great balance of sweet and savory. They’re a perfect addition to the #FarmersMarketWeek lineup!

The special thing here is that the strawberries aren’t simple on top – they’re blended into the basil for an extra burst of sweetness!

Ingredients
For the strawberry basil:
- 1 cup basil leaves
- 2 Tablespoons grated Parmesan cheese
- 2 Tablespoons olive oil
- 1 Tablespoon lemon juice
- 1 clove garlic
- 5 large strawberries, hulled
To assemble:
- 1 baguette, sliced thinly and toasted
- 4 oz. brie, cut into small wedges
- 1 cup strawberries, halved or quartered
Adding strawberries to the basil gives it a nice touch of sweetness! It also goes perfectly with the melty brie.
Directions
- Preheat the broiler.
- In a food processor, add basil, Parmesan cheese, olive oil, lemon juice and garlic. Process until smooth. Add 5 large strawberries and pulse until finely chopped.
- Place the toasted baguette slices on a baking sheet. Spread the basil on toasted baguette slices. Top each slice with a small wedge of brie.
- Broil for 1-2 minutes, until the brie is melted, being careful not to burn them.
- Remove from oven and immediately press a strawberry half (or quarter) into the melted brie.
- Serve immediately.
You can make the strawberry basil a few hours ahead and refrigerate it if you’ll be making these while entertaining. For best results, though, don’t assemble and broil until you’re ready to eat them!

Strawberry Pesto Brie Bites
