Honey Barbecue Chicken Wraps with Broccoli Slaw

The kids are finally back to school.

After a stint of virtual school and then a year of homeschool, having them back in school feels so weird. We’re definitely out of practice of having to leave the house on time every day.

And, I had totally forgot how done everyone is by the time dinner rolls around. They are tired and hungry and our days of leisurely family dinners are officially on sabbatical. “What can I get on the table quickest?” is the current name of the game.

15 minutes is about all you’ll need for these wraps. Seriously.

They’re perfect for days when you’re running in or out the door to sports and activities, or for the days when you and your crew can’t even.

Ingredients

  • 4-8 fully cooked crispy chicken breast strips
  • 4 Tbsp. honey barbecue auce
  • 4 burrito-sized wraps

For the slaw:

  • 1/4 cup mayonnaise
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon sugar
  • Pinch of salt
  • 1 1/2 teaspoon white wine vinegar
  • 3 cups broccoli slaw

For the sauce:

  • 2 Tablespoons mayonnaise
  • 2 Tablespoons honey barbecue sauce
  • 2 Tablespoons Dijon mustard

In these wraps, the sweetness of the barbecue sauce balances well with the tartness of the slaw. It’s a great bite of opposites – hot and cold, sweet and spicy, chewy and crunchy.

Make sure you’re using large wraps, so you have enough to wrap up all this goodness!

Directions

  • Bake the chicken according to package directions. (I like to cook it in the air fryer at 390 degrees for 8 minutes!)
  • While the chicken bakes, mix together the ingredients for the slaw, tossing to coat the broccoli slaw evenly. Refrigerate until ready to serve.
  • Whisk together the sauce ingredients. Set aside until chicken is done cooking.
  • Once the chicken is done, transfer it to a bowl and toss with the 4 Tablespoons honey barbecue sauce.
  • To assemble, spread 1 1/2 Tablespoons of the sauce on each wrap. Divide chicken between wraps. Top chicken with broccoli slaw. Wrap up burrito style and cut in half to serve.

While I love these as-is, the kids preferred these deconstructed: they ate the broccoli slaw as a side.

The slaw holds up well so it can be made a day in advance if you’d prefer.

For extra crispy chicken, the air fryer is clutch!

Honey Barbecue Chicken Wraps with Broccoli Slaw
