There’s a good chance that if you’re observing Lent and have kids, Friday dinners are a rotation of pizza, macaroni and cheese, and fish sticks. Sheet Pan Gnocchi and Vegetables
This easy sheet pan dinner is a fun take on pasta night. Gnocchi and veggies caramelize together on the pan and then get topped off with a generous sprinkle of cheese. For kids that love to dip, serve with warmed marinara!
Broccoli cheddar soup is always a favorite for my kids, and this version is bulked up with additional veggies and black beans. For kids that are adverse to spicy dishes, skip the poblano and reduce the chili powder.
