There’s a good chance that if you’re observing Lent and have kids, Friday dinners are a rotation of pizza, macaroni and cheese, and fish sticks. At the end of a long week, it’s hard to come up with something everyone will eat – so I’ve rounded up ten meatless meals my kids are always happy to see on the table.
These meals are real kid-pleasers! And they’re parent-pleasers too.
From one-pan or pot meals, to easy make-ahead casseroles, you’ll find something here your family will love that you won’t dread making on a Friday night.

Sheet Pan Gnocchi and Vegetables
This easy sheet pan dinner is a fun take on pasta night. Gnocchi and veggies caramelize together on the pan and then get topped off with a generous sprinkle of cheese. For kids that love to dip, serve with warmed marinara!

Broccoli cheddar soup is always a favorite for my kids, and this version is bulked up with additional veggies and black beans. For kids that are adverse to spicy dishes, skip the poblano and reduce the chili powder.

Spinach Artichoke Baked Ravioli
This prep-ahead pasta bake is a sanity saver at the end of the week. If your kids like spinach and artichoke dip, they’ll love this!
This spin on the traditional pizza features hummus in place of tomato sauce and lots of fresh toppings.
In this one-pot pasta, the noodles cook right in the sauce. Fewer dishes on a Friday? Always a win!
For the busiest nights, I love breaking out this simple sandwich. It makes a great breakfast too!
These veggie-loaded pancakes are an absolute favorite of my kids!
When all else fails, pizza is the answer. Grilled pizza is even faster than takeout so it’s always a favorite here!
