Ingredients
This salad is perfect for early-to-mid summer – between Memorial Day and the Forth of July – because you’ll find both the spinach and berries in season.
- 8 oz. baby spinach
- 1/2 cup blueberries
- 1/2 cup quartered strawberries
- 1/4 cup feta cheese
- 3-4 Tablespoons poppy seed dressing

How to Make
This salad takes all of five minutes to make!
Start with the spinach in a large bowl. Drizzle the dressing over and toss until the spinach is evenly coated.
Add in the berries and toss again until evenly distributed.
Transfer the salad to a serving bowl and top with feta.
Serve immediately.
Top Tips for a Perfect Salad
- This salad is best prepared just before serving, but the salad dressing can be made up to a week ahead and stored in the refrigerator.
- Don’t want to make your own dressing? Store-bought works too!
- If feta isn’t your thing, try subbing it for goat cheese – or even peeled, diced apple!

My Patriotic Bundt Cake is another staple for Memorial Day or the Fourth of July. This dressed up box cake looks impressive – but is impressively easy. Another easy dessert is Firecracker Cookies – they can be made with store-bought cookies and a tub of icing if you want!
If you have more time to spend, I love doing Ice Cream Sandwiches with red, white and blue sprinkles, or using red, white, and blue rice krispies to make Nutella Topped Rice Krispie Treats.
