Chocolate Banana Bread #Choctoberfest

New, inventive recipes are always fun – but sometimes you just want a classic.  We love banana bread around here. Add in lots of chocolate, and you’ve got a treat that barely lasts 24 hours.

It was also a great opportunity to showcase another favorite of ours – Barlean’s Butter Flavored Coconut Oil. Whether or not you’re a coconut oil fan, you should give this a try. It’s what converted me! It really does have a fabulous butter flavor – you won’t miss the real thing.

Chocolate Banana Bread

Makes 1 loaf

1/3 cup old fashioned oats
1 large egg + 1 egg yolk

1/2 cup vanilla Greek yogurt
1/2 cup coconut oil, measured melted and cooled slightly
1 teaspoon vanilla extract
3/4 cup white sugar
1 cup mashed bananas, approx. 2-3 bananas
1/2 tsp. salt
1 tsp. baking soda
1 cup white whole wheat flour or plain white
1/4 cup unsweetened cocoa powder
1/2 cup chocolate chips dark chocolate chips for healthier
1/4 cup miniature chocolate chips

Preheat the oven to 350 degrees F. Grease and flour a loaf pan.

Run the oats through a blender or food processor until the consistency of flour.

In a large bowl, whisk together the egg and yolk. Whisk in the yogurt and coconut oil. Whisk in the vanilla and sugar. Stir in the mashed banana.

To the same bowl, add the oat flour, salt, baking soda, flour, cocoa powder, and chocolate chips. Mix until just combined.

Transfer the batter to the prepared pan and bake for an hour, until a knife inserted comes out clean. Remove from the oven and let cool before removing from the pan.

I was so excited to get to know her blog over the last few weeks – she and I are super similar! She also has two little ones that help her out in the kitchen, family meals are her bread and butter, and she’s crazy for anything chocolate peanut butter.

Yeah, I know – it was like looking in a mirror!

I knew I wanted to make a treat Nicole would love – and I also wanted it to be something her girls could help with. These Crispy Chocolate Peanut Butter Bars are the perfect fit!

My little helpers helped with the measuring and stirring. These treats are no bake, but they do need a few minutes on the stove top to melt the ingredients together so I handled that. They only take about five minutes to prep – perfect for a toddler attention span! – and they’re so, so good. If a peanut butter cup and a crunch bar had a baby, this would be the result.

Crispy Chocolate Peanut Butter Squares

Crispy Chocolate Peanut Butter Bars
(slightly adapted from The Big Man’s World)
Makes 20 Bars

3 cups crisped rice cereal
1 1/2 cups milk chocolate chips
3/4 cup creamy peanut butter
1/4 cup coconut oil
1/2 cup maple syrup

Line an 8×8 baking pan with parchment and set aside.

Add cereal to a large mixing bowl, set aside.

Add the chocolate chips, peanut butter, coconut oil, and maple syrup to a small saucepan and heat over medium-low heat, stirring continuously, until all melted together and well combined.

Pour the chocolate mixture over the cereal and stir until combined. Pour the mixture into the prepared pan, smooth out, and refrigerate for several hours.

Once cooled and solid, use the paper to lift out of the pan and cut into squares. Store in an airtight container in a fridge.

Apricot Oatmeal Bars #Tresomega #OrganicsForLife

Another recipe for Tresomega, and another dish I’ll be re-making this holiday. The food sign-up list for the family Christmas Eve got emailed out – and I snatched up the cookies slot PDQ. Mostly because my freezer is already chock full of cookies (#ChristmasCookieWeek kicks off on Monday!)

But, the family also has two celiacs so I’ll be making up a tray of gluten-free cookies too – and these will be added to the plate for sure. These are a great (and easy!) gluten free treat and the flavor can be easily switched up by using a different flavor of preserves. I think raspberry would be perfect for the holidays!

Apricot Oatmeal Bars

Makes 18 bars

3/4 cup Tresomega Virgin Coconut Oil
1 cup packed light brown sugar
1 1/2 cups rolled oats
1 1/2 cups almond flour
1 tsp. salt
1/2 tsp. baking powder
3/4 cup apricot preserves

Preheat the oven to 400 degrees. Spray a 9×9″ pan with nonstick cooking spray and line with baking parchment.

Mix together the coconut oil, brown sugar, oats, flour, salt and baking powder. Press half of the mixture into the pan.

Spread the preserves over the mixture in the pan and then crumble the remaining mixture over, pressing down lightly.

Bake for 30-35 minutes, until edges are beginning to brown. Let cool to room temperature, then place in the refrigerator to cool completely.

When chilled, lift the bars out of the pan using the edges of the parchment. Slice and store in an airtight container in the refrigerator.

Cranberry Honey Banana Bread #RecipeMakeover

While I’m pretty decent at whipping up a healthy dinner when need be, my baking projects are decidedly different.  Tackling a makeover of one of my most-frequently-baked items – banana bread – seemed like the perfect challenge.

As I was working on this recipe, I turned to products from #RecipeMakeover sponsor, Barlean’s. Their Butter Flavored Coconut Oil can be subbed 1:1 for butter – so that was a great place to start. Roasting the bananas brought out some more natural sugars, and using Barlean’s Digestive Blend punched up the flavor while adding some good-for-you stuff to the bread (it’s a mix of ground flaxseed, chia seed, quinoa, unsweetened shredded coconut, and a pumpkin blend that is remeniscint of pumpkin spice!) My added sweetener here was a local cranberry honey (fun fact: New Jersey is the 3rd biggest cranberry producing state in the US!) – I Iiked the flavor it added, but if you don’t have this available any honey would be great in this recipe.

The result? A banana bread that was really good – and much better for you than my usual go-to loaf.

Cranberry Honey Banana Bread

Makes 1 loaf

4 medium bananas
1 1/2 cups whole wheat flour
1/2 cup Barlean’s Digestive Blend
1 1/2 tsp. baking soda
1/2 tsp. ground cinnamon
Pinch of ginger
2 eggs, lightly beaten
1/2 cup melted Barlean’s Butter Flavored Coconut Oil
1/2 cup Cranberry Honey (or regular honey)

Preheat your oven to 350 degrees.

Line  a baking sheet with foil. Prick the banana peels with a fork, place them on the baking sheet, and roast for 15 minutes. Remove to cool.

In a large bowl, whisk together the flour, Barlean’s Digestive Blend, baking soda, cinnamon, and ginger.

In another bowl, whisk together the eggs, Barlean’s Butter Flavored Coconut Oil, and honey until well combined. Mash bananas and add to the wet ingredients – stir until well combined.

Add the wet ingredients to the dry and mix until the everything is just moistened.

Pour the batter into a greased loaf pan. Bake for 40-50 minutes, until golden brown and a toothpick comes out clean.

Coconut Oil Brownies #Choctoberfest

For Choctoberfest, I also received some products to try from Barlean’s. These were complimentary, but all opinions are my own.

One of the products they sent was Butter Flavored Coconut Oil. Coconut oil is a great substitute for butter in baking, and butter flavored coconut oil is especially fantastic. Using it is a fantastic way to whip up dairy-free baked goods, like these brownies.

They’re chewy and fudgy and exactly what you want out of a brownie.

Coconut Oil Brownies

Makes 1 9×9″ pan

3/4 cup butter flavored coconut oil
4 oz. unsweetened chocolate
1 cup packed brown sugar
3 eggs
1 tsp. salt
3/4 cup flour

Preheat the oven to 350 degrees.

In a double boiler, melt the coconut oil and chocolate together. Once totally melted and combined, remove from heat and whisk in the brown sugar. Whisk in the eggs, until the batter thickens. Stir in the salt and flour until just combined.

Pour into a 9×9″ baking pan and bake for 25 minutes. There may be some oil remaining on the top or sides – it will be absorbed as the brownies cool. Let cool overnight before slicing.
