Key Lime Pie Cookies

Ok, so hear me out on this one: key lime pie, but a version you can hold in your hand. No fork needed.

These cookies are like a mini key lime pie – but the graham cracker cookie is way studier than any crust (and, in my opinion, way more delicious!) This is such a fun take on the classic dessert!

I used key limes from Melissa’s Produce for this recipe. Since the lime is the star of the show here, you want to make sure you’re using the freshest limes!

If you’ve been around for a while, you know I love my tea time treats! Tea time became a family favorite during the early days of the pandemic, and I still love creating seasonal treats to go with our tea.

This bright crumb cake gets it’s flavor from lemons courtesy of Melissa’s Produce and dried lemon peel from Selefina spices. It the perfect afternoon pick-me-up for these early days of spring!

Homemade Mint Chocolate Chip Ice Cream

This post is sponsored in conjunction with #SpringSweetsWeek. I received product samples from sponsor companies to help in the creation of the #SpringSweetsWeek recipes. All opinions are mine alone.

Welcome to spring! I’m dreaming of everything green – which is why I was so, so excited when Melissa’s Produce sent me a big bunch of fresh mint. Mint is something I grow in my garden each year so having some before garden season was such a treat – and I knew I needed to make it the star of the show.

Mint Chocolate Chip Ice Cream is a family favorite, but this version is next level. There are no flavoring extracts or food coloring here – that gorgeous color and all the flavor comes from the mint!

This ice cream is incredible. It’s fresh, creamy, and minty with an hint of earthiness from the mint leaves. It is a process to make, but trust that the time invested will be so very worth it when you take that first bite!

Mini Rhubarb Crumb Loaves #SpringSweetsWeek

This post is sponsored in conjunction with #SpringSweetsWeek. I received product samples from sponsor companies to help in the creation of the #SpringSweetsWeek recipes. All opinions are mine alone.

These little loaves are the perfect addition to your spring tea table! Just the right amount of sweetness, balanced by the tartness of the rhubarb. The bread is soft and spongy, and the crumbs add a great burst of texture and sweetness.

Small loaf of crumb topped rhubarb bread on a plate.

The little loaves are perfectly portioned for an afternoon tea – or to share with friends!

Persimmon Pecan Cake

This post is sponsored in conjunction with the #FamilyBakingChallenge. I received product to aid in the creation of the recipe. All opinions are mine alone.

It was this time last year that our obsession with tea started. Jake wanted to do the annual Santa train – and Julie adamantly did not. Instead, she requested a holiday outing that did not involve Santa, so I made us reservations at a local tea room. Julie and I were both smitten with the experience and have been recreating it at home since.

It also kickstarted my experimentation with tea. I thought I didn’t like it – but I was pleasantly surprised to realize I was wrong. A cup of tea and an afternoon treat has become one of my favorite rituals this year.

What’s the last thing you did solely for yourself?

It’s a hard season for self care – especially since fall also means back-to-school for so many. It’s easy to get caught up in all the “to-dos” – I know I do.

Often, I’ll extend that in to blog projects. This galette? I made just for me. Just because I wanted to. And yes, I ate the whole thing myself.

But, the afternoons? They still feel like summer.

This small-batch punch is perfect for these days. It includes the iconic flavors of fall in a refreshing sipper.
